This tuna uses Nagasaki-produced tuna. Our tuna isWe have created our products without making any compromises so that you can easily enjoy the taste of an authentic sushi restaurant in the comfort of your own home.

In particular, during the aging process, we use appropriate paper to adjust the moisture content and maintain the quality of the meat while aging. This aging method brings out the maximum flavor of the tuna, giving it a sticky texture and rich flavor.

We properly separate lean meat and medium-fatty meat, and carefully marinate each part. This process maintains the perfect balance of salt and soy sauce, allowing you to enjoy the original taste of tuna.

After carefully removing the scales from the yellowfin tuna, we remove the internal organs and carefully shred the fish. After sprinkling with salt and exposing to water to remove moisture and excess fat, they are soaked in a mixture of white vinegar and red vinegar to age. By going through this process, the firmness of the yellowfin tuna and the flavor of the blue fish stand out.

Kasgo is young red sea bream stuffed with kelp. By removing the moisture, the flavor is concentrated, and the meat is soft, which is unique to young fish. It used to be a standard sushi topping for Edomae sushi, but in recent years fewer restaurants have prepared it.

The tuna we deliver is rapidly frozen at an ultra-low temperature of -60℃ and preserved without sacrificing quality.The best way to thaw tuna is to open the vacuum pack, place the tuna in a container, cover loosely with plastic wrap, and slowly thaw in the refrigerator. This allows the tuna to thaw naturally, bringing out its flavor. If you are in a hurry, you can quickly thaw the vacuum-packed food by soaking it in water. (Please also refer to the video)
