■120mm Aji-Kiri White Steel No.2 Black Hon-Kasumi Ginza Watari Original
A double-edged knife suitable for filleting small fish. Although designed for aji-kiri, it is also convenient for sushi preparations (such as shrimp).
■Why is the blade black?
The black finish is due to leaving the forged surface as-is. The black color is called an oxide film, which is a black rust that coats the blade to prevent harmful red rust.
